First day of Fall break and I've got a little extra time, so I've decided to do a food post today [its been a while]. I spent the weekend in Vermont for my boyfriend's sister's wedding, and it was beautiful. But to get to the point, we spent every morning together as a group, a HUGE group, eating and chitchatting. To be honest I'm not a fan of breakfast food, I usually just eat lunch for breakfast. But after this weekend, I'm a little more keen to the whole idea. So I took this morning to reflect on all the morning goodies and put my own twist on it.
I chopped up half an onion and let that saute on its own for a bit; to make them sweet, not burnt, let them sit on medium heat for several minutes; to get the tiniest bit of great 'caramelized onion' taste, without being patient enough to actually caramelize them, sprinkle some sugar and a tad of water over them while they sit. I then chopped, and threw in, tomatoes and yellow peppers.
I cracked some eggs in a bowl, added a splash of water [to make them fluffier] and poured it over my sauteed veggies.
I'm a huge advocate of 'making it work', so after having attempted to make an omelette and watching it fall apart, I decided to make my Ol' Famous Scrambled Omelette.
While the eggs were hoppin' around the pan I put together the sides, toasted a slice of bread...
...and rinsed raspberries from the local farm. [Check out the new American Apparel nail polish]
I paired it all with yummy blueberry green tea [my original favorite tea] and relaxed while I filled my belly.
